Not us! Our Beautiful Coconut & Basil Curry is not only full of protein but full of the good fats that make your skin glow and also turns your body into a fat burning machine.
So get cooking it's good for you!
Chicken Fillets Diced
Tablespoon Curry Powder ( Mild I used)
Corriander chopped fresh
1/2 Onion finely chopped
Fresh Garlic Chopped or Garlic Granules if short of time
Basil Chopped Fresh
1/4 Teaspoon of cinnamon
1/4 Teaspoon of Tumeric
1/2 Teaspoon of black pepper
300 ml Coconut Milk (Carton no E numbers)
Squeeze of fresh lemon
Heat pan add coconut oil.. make sure melted before adding chicken
Add chicken with salt cook till no pink
Add onion cook till slight soft then..
Add curry powder, garlic, cinnamon, turmeric,
Then add coconut milk, coriander, and squeeze of lemon..
Simmer for around 20 mins
**If you need to thicken add some plain flour (I used gluten free because of intolerance to wheat)
Fresh Basil leaves to garnish
With warm basmati rice and some salad…
